Is there more than one type of Sched 40 pipe? The stuff they had at Lowe's was flexy as Hasbro HQ. I could bend it 30 degrees over like 3 feet. It would seem a little strange to make a water gun out of flexible pipe. Is there more than one type? Also, is it worth buying pvc online at someplace like McMaster Carr

There is higher schedules of pipe, which essentially means thicker. There also is pressure rated pipe, which most smaller pipes are. It is harder to find larger pressure rated PVC pipe.

The PVC pipe will be somewhat flexible. That shouldn't be a problem - it won't bend because most water guns use short segments. If you don't like the flexibility for whatever reason, use thicker pipes or even metal pipe.

I would only recommend buying PVC pipe online if it was cheaper or no PVC pipe is available locally. McMaster stocks all sorts (except pressure rated) - including schedule 120 pipe which is impossible to find where I live.
